What with his metal, prog, Indian, electronic, and other influences, Dan Weiss is one of the most interesting jazz drummers in town. This is his mainstream piano trio — but with Weiss, nothing is so mainstream.

MAKE A NIGHT OF IT: In person, you can just make the last seating at eclectic sensation Olmsted — if you're lucky enough to get a table. Streaming at home, follow up your Paper Plane with its cousin, a Naked and Famous: pour 3/4 oz. each of Mezcal, yellow Chartreuse, Aperol, and lime juice into an ice-filled cocktail shaker. Shake. Strain into a chilled Martini glass or coupe.
