MAKE A NIGHT OF IT: And here's a cocktail that could be insipid — but thankfully isn't. Eagle's Dream: pour 1-1/2 oz. Gin, 11/2 oz. Crème de Violette, 3/4 oz. lemon juice, and 1/2 oz. Simple Syrup, with an egg white, into a cocktail shaker WITHOUT ice. Dry shake. Add ice. Shake some more. Strain into a chilled Nick and Nora glass.
