Jaap Blonk can (and will) make any sound you can imagine — and many you can’t — with his mouth. Let’s just say this: he’s perhaps the only person around who can do Kurt Schwitters’s Ursonateand have it be one of the tamer things in his reportoire.

MAKE A NIGHT OF IT: In person, nice enough bistro at Bacchus. Streaming at home (poor thing), have a Dutch Oven: put 2 sugar cubes at the bottom of a cocktail shaker. Add 3 drops of Absinthe, 2 dahes of Peychaud’s bitters, 1 dash of orange bitters, and a capful of soda water. Muddle. Pour in 2 oz. Genever. Add ice. Stir. Strain into a tumbler over ice. Express a grapefruit twist into the drink and rub the rim with it.
