MAKE A NIGHT OF IT: In person, I see people eating in the newly-transplanted-to-Prospect Heights New American No. 7. Is it open yet? Streaming at home, have a Cel-Ray Collins: muddle a finely chopped celery stalk, 1/2 lime (cut into wedges), and 2 teaspoons sugar in the bottom of a cocktail shaker. Add ice. Pour in 1-3/4 oz. Gin. Shake. Strain into a Collins glass over ice. Top with Cel-Ray Soda (I still call it tonic — so shoot me). Add 1 dash of celery bitters. Garnish with a celery stalk.
