If there’s anything close to This List’s heart, it’s French wind music. Although François-René Gebauer lived into the middle of the 19th Century, he happily remained indebted to the lighthearted 18th Century style galant. Period instruments — and subscriber GW will want to know that, Gebauer having been a bassoonist, this ensemble features three of them.
MAKE A NIGHT OF IT: In person, I’m not gonna even tell you what El Mil Sabores puts on their Torta Loca sandwich. You have to see it for yourself. Streaming at home, Henri de Toulouse-Lautrec, who invented the drink, could drink an Earthquake in the early afternoon. Whether you can is another story. Pour 1/2 oz. each of Cognac and Absinthe into an ice-filled cocktail shaker. Stir. Strain into a snifter. Toulouse-Lautrec didn’t, but you might want to garnish it with a lemon twist; you can also put a lump of sugar into it if you want.
