The Quince Ensemble sounds as luscious as their eponymous fruit tastes. Here they sing a digitally realized premiere of a piece by Annie Hui-Hsin Hsieh, with dance.

MAKE A NIGHT OF IT: The Pinkest Gin: pour 2 oz. Gin, 1/2 oz. grapefruit juice, 1/4 oz. lemon juice, and 1 oz. Quince Syrup (not as easy to make as Simple Syrup — but you have a delicious poached quince left over when you're done), with 2 dashes of Peychaud's bitters, into an ice-filled cocktail shaker. Shake. Strain into a chilled Martini glass or coupe.
