The excellent pianist Simone Dinnerstein plays Glass and Schubert. Her Glass playing is as good as can be; there is none better. If her Schubert playing isn't, quite, well, nobody's going to complain.

MAKE A NIGHT OF IT: Deauville: pour 3/4 oz. each of Cognac and Laird's Bonded Apple Brandy, 1 oz. Cointreau, and 1/2 oz. lemon juice into an ice-filled cocktail shaker. Shake. Strain into a chilled Martini glass or coupe. Garnish with a lemon twist.
