MAKE A NIGHT OF IT: OK, the famous Hugo cocktail isn't from Austria: it's from the Südtirol in Italy. But OK, a lot of people in both Austria and the Südtirol don't yet fully accept that the Südtirol is in Italy rather than Austria. Also, this cocktail is kind of summery. But at 2 in the afternoon, you don't want a heavy wintry cocktail. SO: pour 3 oz. Prosecco and 2 oz. St-Germain into a Champagne flute. Top with soda water. If you can convince yourself you're in the Südtirol, I envy you.
