MAKE A NIGHT OF IT: Winter Caipirinha: muddle 3 lime wedges, 4 halved kumquats, 10 rosemary needles, and 1 scant tablespoon of sugar at the bottom of a cocktail shaker. Add ice. Pour in 2 oz. Cachaça. Pour UNstrained into a rocks glass. Garnish with additional kumquat slices and rosemary needles.
