You can't predict what the Brooklyn multidisciplinary duo LEIMAY will be doing.  That's a good thing.

MAKE A NIGHT OF IT:  Another favorite from Pegu Club's opening menu, Audrey’s Tantris Sidecar:  rub the rim of a chilled Old Fashioned glass with a lemon peel and rim with sugar.  Pour 1-1/4 oz. Cognac, 1/2 oz. each of Calvados, Cointreau, lemon juice, and Simple Syrup, and 1/4 oz. each of Green Chartreuse and pineapple juice into an ice-filled cocktail shaker, shake, and strain into the rimmed glass.  Toss the lemon peel on top.  You won't believe how delicious this is.
