Pamela Z is one of this List's very favorite composer/performers, who does enhanced vocal pieces with style, control, and seemingly limitless imagination.  Nomi Epstein is an exploratory composer and pianist whose music tends to move slowly but with a lot of interesting detail.

MAKE A NIGHT OF IT:  We honor the Gray Center with a Chicago Cocktail:  rub a lemon slice around the rim of a cocktail flute and rim it with sugar.  Pour 2 oz. Brandy with 1/4 teaspoon of Cointreau and 1 dash Angostura bitters into an ice-filled cocktail shaker.  Stir.  Strain into the Champagne flute.  Top with Champagne.
