This series dedicated to putting you to sleep — ummmmm ushering you into the sleep state — finds a perfect protagonist in Tatsuya Nakatani. The multi-percussionist's almost ambient (but smarter) pieces evoke a bit of the music of his native Japan, but they're even more evocative of the New Mexican desert in which he now resides.

MAKE A NIGHT OF IT: Open and Shut: pour 1/2 oz. Cognac and 1-1/2 oz. Amaro Lucano in a rocks glass with NO ICE. This is a scaffa (something I personally can only enjoy as a nightcap): a cocktail drunk at room temperature. Garnish with an orange or lemon twist.
