Ricardo Gallo is a sharp, angular jazz pianist-composer who’s also interested in exploring the folk musics of his native South America.

MAKE A NIGHT OF IT: In person, the self-explanatory Colombia in Park Slope, serving the food of Gallo’s home country. Streaming at home, have a Billionaire: pour 2 oz. Bourbon, 1 oz. lemon juice, 1/2 oz. each of Grenadine and Simple Syrup, and 1/4 oz. Absinthe into an ice-filled cocktail shaker. Shake. Strain into a chilled Martini glass or coupe. Garnish with a lemon wheel.
