Experimental sounds from "Central Illinois and beyond" (if you can imagine anything beyond Central Illinois). Brooklyn chauvinists will be happy to know that our own Cassie Weiland (yeah, she was born in Illinois) will have a piece played by guitarist Jamie Monck — as will the excellent Gulli Björsson of Iceland, which is far from both Brooklyn and Central Illinois. Molly Jones, one of the stars of Chicago's extremely fertile experimental music scene (now THAT'S beyond Central Illinois), will improvise. And more more more!

MAKE A NIGHT OF IT: Pistolet: pour 1 oz. Cognac, 1/2 oz. each of lemon juice and simple syrup, and 1 teaspoon of Suze into an ice-filled cocktail shaker. Shake. Strain into a Champagne flute. Top with Champagne (see what I did?).
